Loved it, it is so light and delicious! Perfect over penne a la vodka. Our new go to, we usually order it and chicken parmesan from an Italian restaurant that we like, but not any more.

Wow! If you you think you need meet to complete a meal, guess again. This eggplant is so yummy and not at all bitter. The vodka sauce is pure love and like all of the meals, there’s plenty of food. Add some salad and wine and dig in!
