Eggplant is the new Chicken

This dish was absolutely fantastic! Even my husband, who’s a dedicated meat lover, thoroughly enjoyed it. As I'm trying to cut back on meat, this meal was a perfect choice. The ricotta was the standout element for me—it added such a creamy richness. The preparation of the eggplant was spot on; it’s peeled, lightly battered, and fried to perfection. I can’t recommend this enough!
