Whipped Sweet Potatoes

The flavor was good, a tan but sweet for me though. I love the natural sweetness of sweet potatoes and cooking them until that caramel sweetness naturally comes out. These were just a bit on the overly brown sugared side.
The texture however was pretty bad, very stringy. It was difficult to get a decent bite of them without a mouthful of tough, stringy pieces taking over.

Everyone in NC makes these, right? But how many make them right? They weren't too sweet and were nice and creamy. Yummm.

Love these! Freezer is stocked with these for a quick side and it pairs well with mostly anything!
